
Orange Honey Cake Recipe
1/2 c butter, softened
1/2 c honey
1/2 c granulated sugar
3 ea egg yolks
2 c cake flour, sifted
2 t baking powder
1/4 t salt
1/4 t baking soda
1/2 c orange juice
3 ea egg whites
rind from 2 oranges, grated
Preheat oven to 350. Line an 8″ cake pan with parchment paper. Grease paper. Cream butter and sugar. Add honey and egg yolks. Beat 1 minute. Sift in separate bowl the flour, baking powder, salt and soda. Add dry ingredients alternately with juice to creamed mixture. Beat thoroughly. Mix in orange rind. In separate bowl, beat egg whites until stiff. Fold into cake batter gently. Pour into prepared pan. Bake about 45 to 50 minutes or until cake tester inserted in center comes out clean.
