Ratatouille

Ingredients
2 tbsp Oil .
1 Small Onion diced
1Garlic clove diced
1 Eggplant small diced.
1 Zucchini Peeled & Diced.
2 Tomatoes Large & firm.
1 Green Bell Peppers Diced.
Salt
1 tsp Ground Cumin Powder
1 tsp Ground Coriander powder
1 tsp Chilli powder
½ tsp Sugar (optional)
Preparation:
Peel the tomatoes by dipping in hot water then cooling in cold water.
Remove the skin, & dice the tomatoes.
Sprinkle salt over eggplant, Zucchini & let stand for 30 minutes.
Drain & pat dry on Paper towels.
Heat Oil in a pan, add onions fry till translucent, add garlic & stir.
Mix in the eggplant, Zucchini & cook.
Add peppers, tomatoes, salt & cover.
After few minutes, open the lid &, add all the powders to combine.
Add water if the veggies stick to pan or too thick.
Adjust the seasoning & Garnish with Cilantro.
Serve as side dish for Rice.
