Chocolate Chip Cheesecake Recipe

1 cup Chocolate Wafer Crumbs
4 tbs Margarine, melted
24 oz Cream Cheese, softened
3/4 cup Sugar
1/4 cup All-Purpose Flour
3  Eggs
1/2 cup Sour Cream
1 tsp Vanilla
1 cup Mini Semi-Sweet Chips
Combine crumbs and margarine; press onto bottom of 9-inch springform pan. Bake at 350 degrees for 10 minutes.
Combine cream cheese, sugar and flour, mixing until well blended. Add eggs, one at a time, mixing well after each addition. Blend in sour cream and vanilla. Stir in chocolate chips and pour into crust. Bake at 350 degrees for 55 minutes.
Loosen cheesecake from rim of pan and cool. Garnish with whipped cream and chocolate chips.

Chocolate Velvet Cheesecake Recipe

1 cup Vanilla Wafer Crumbs
1/2 cup Chopped Pecans
5 tbs Granulated Sugar
1/4 cup Margarine, melted
16 oz Cream Cheese, softened
1/2 cup Brown Sugar
2 Eggs
6 oz Semi-Sweet Chips, melted
2 tbs Milk
1/3 tsp Almond Extract
2 cup Sour Cream
Combine crumbs, pecans, granulated sugar and margarine; press onto bottom of 9-inch springform pan. Bake at 325 degrees for 10 minutes.
Combine cream cheese and brown sugar, mixing until well blended. Add eggs, one at a time, mixing well after each addition. Blend in chocolate, milk and almond extract; pour over crust. Bake at 325 degrees for 35 minutes.
Increase oven temperature to 425 degrees. Combine sour cream and granulated sugar; carefully spread over cheesecake. Bake at 425 degrees for 10 minutes. Loosen cheesecake from rim of pan and cool.

1 cup Mayonnaise

Mix ingredients together. Bake in lightly buttered crock pot on High for 1 hour. Serve with pita bread or wheat crackers.

3 lbs cooking Apples
10 slices of Bread, cubed
1/2 tsp Cinnamon
1/4 tsp Nutmeg
1/8 tsp Salt
1 cup Brown Sugar
1/2 cup Butter or Margarine, melted
Wash apples, peel, core, cut into eighths, place in bottom of the crock pot. Toss together, bread cubes, cinnamon, nutmeg, salt, sugar, butter. Place on top of apples in crock pot and cover. Cook on low for 3-4 hours. Serve topped with vanilla ice cream. Makes 6-8 servings.

Crock Pot Macaroni and Cheese Recipe

8 oz Elbow Macaroni, cooked and drained
16 oz shredded sharp Cheddar Cheese
12 oz Evaporated Milk
1 1/2 cups Milk
2 Eggs
1 tsp Salt
1 tsp Black Pepper
Place the cooked macaroni in crock pot that has been sprayed with nonstick cooking spray. Add the remaining ingredients, except 1 cup of cheese, and mix well.
Sprinkle with the remaining cup of cheese and then cover and cook on low for 5-6 hours. The macaroni and cheese will be firm and golden around the edges when done.

Crock Pot Barbecue Pork and Beef Recipe

1 1/2 pounds lean Stew Beef
1 1/2 pounds lean Pork Cubes
1 cup finely chopped Onion
2 cups finely chopped Green Bell Pepper
6 oz can Tomato Paste
1/2 cup Brown Sugar
1/4 cup Cider Vinegar
1 tbs Chili Powder
1 tsp Salt
2 tsp Worcestershire Sauce
1 1/2 tsp Dry Mustard

Stir all of the ingredients well and add to the crock pot. Cover and cook on high for 8 hours. Stir to shred meat. Serve on buttered rolls or pita bread.

Valentines Day Heart Cookies Recipe

1 cup Butter or Margarine, softened
1/2 cup Sugar
1 tsp Vanilla
2 Eggs
3/4 cup Toasted Hazelnuts, skinned and ground
1/2 oz Semisweet Baking Chocolate, finely chopped
2 1/2 cups All-purpose Flour
1 1/2 tsp Ground Cinnamon
1/2 tsp Ground Nutmeg
1/2 cup Raspberry Jam
1 oz Semisweet Baking Chocolate, melted
Mix butter and sugar in large bowl until light and fluffy. Mix in vanilla and eggs until smooth. Add remaining ingredients except jam and melted chocolate. Beat until well blended. Cover and refrigerate 1 hour.
Heat oven to 375 degrees. Roll one fourth of dough at a time between pieces
of waxed paper until 1/8 inch thick. Cut with 2 to 3 inch heart shape cookie
cutter. Place on ungreased cookie sheet.
Bake 7 to 9 minutes until light brown. Remove from cookie sheet to wire rack. Cool completely. Spread about 1/2 teaspoon raspberry jam on top of each heart cookie. Drizzle with melted chocolate. Let stand until chocolate is firm.

Easy Chicken Marengo Recipe

1 whole frying Chicken, cut into pieces
4 cloves Garlic, crushed
2 tbs Olive oil
1 Onion, thinly sliced
1/4 tsp Thyme
1 tsp Salt
1/4 tsp black Pepper
1/2 cup dry White Wine
1 cup Italian plum Tomatoes, chopped
1 tbs Tomato paste
1 tbs Butter
1/2 lb Mushrooms, sliced
3/4 cup black Olives
1 tbs Lemon juice
Saute onions and crushed garlic cloves in a kettle or deep iron skillet in olive oil until lightly browned; remove and brown chicken pieces well on all sides. Mix together tomato paste and chopped tomatoes, stir in wine, browned onions and garlic, and seasonings, except parsley. Top chicken pieces with liquids mixture. Cover tightly and simmer for 45 minutes. As the chicken is simmering, in a separate skillet saute the remaining onions and mushrooms in butter until golden. Add olives and lemon juice to the mixture. Add this to the top of the chicken in the kettle, cover and cook another 15 – 20 minutes. Sprinkle with parsley and serve. Serves 4.

Quick and Easy Beef and Scallop Stir Fry Recipe

1 lb Beef, cut for stir fry
1 lb Sea Scallops
2 tbs Peanut oil
1 cup Sliced green onion
1 tsp Minced garlic
1/4 tsp Red pepper flakes
1/4 tsp Fresh ginger
1/4 tsp White pepper
1 tsp Salt
1 tbs Water
Heat oil in wok or large skillet until almost smoking. Add garlic and beef, then scallops, and stir fry for 30 seconds. Add the remaining ingredients and stir fry beef and scallops for another 30 seconds.

1/3 cup Butter or Margarine
1/4 cup Vegetable oil
1/2 cup chopped Onion
2 Jalapeno Peppers, chopped
1 clove Garlic, minced
1 lb Crab meat
1/4 cup Mayonnaise
1 tbs chopped Cilantro
1 teaspoon Salt
16 8-inch flour Tortillas
1 cup Monterrey Jack Cheese, shredded
In a medium saucepan, over medium-high heat, saute’ onions, peppers, and garlic in butter and oil, stirring constanty, until tender. Remove from heat. Gently stir in crabmeat with mayonnaise, cilantro, and salt. Place tortillas on baking sheets, brush one side of each tortilla with ingredients and sprinkle with cheese. Fold in half. Bake at 475 degrees for 4 minutes or until golden. Cut each tortilla into thirds. Serve warm.
